Pumpkin Chocolate Chip Cookies
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoons salt
2 teaspoons pumpkin pie spice
1 cup packed dark-brown sugar
1/2 cup sugar
3/4 cup butter, softened
1 large egg
1 cup canned solid-pack pumpkin
1 teaspoon pure vanilla extract
chocolate chips (as many as you want)
1. Preheat oven to 300 degrees.
2. Mix all ingredients.
3. Bake for 22-24 minutes.

I have very strong memories of consuming A LOT of these in our college days.

ReplyDeletei always used a super cheater recipe - just 3/4 can of pumpkin, 1 box of dry spice cake mix, and chocolate chips. your recipe probably tastes much better. :)
ReplyDeleteI love everything pumpkin except pie- these look delicious! Try the "Lucious Four-Layer Pumpkin Cake" recipe from Kraft- I made it last year for Thanksgiving and it was really pretty, really easy and REALLY good- and I'm not the hugest cake fan.
