a not typical/typical February day

Not typical: it's cold and rainy. I heard the Superstitions are even covered in snow! February is usually just right, but I don't mind cold days like this one bit, because any dip in temperature keeps us that much farther away from the summer time heat.

Number two: we are sick. I guess we are lucky, since this is the first time we've not been well all winter. I feel like everyone else I know has been battling one thing after another. We have runny noses and coughs and stuffy heads. Nothing a day (or two) in bed won't cure.

Typical: an afternoon snack, backpacks and shoes strewn all over the front hall, and no idea what to make for dinner. Blerg. What are you cooking tonight?


  1. Are those your painted floors? You really have a touch with home improvements. they look glossy and beautiful. Great idea.

  2. I see a bit of floor and it is beautiful .Your hard work and patience paid off.
    I have left over roast beef pot roast so am shredding is and making tacos.

  3. I'm all about the test kitchen quick cookbook. We made spice rubbed pork chops and pineapple salsa tonight. Yum. Stay warm and cozy!

  4. we are having "brinner" casserole from six sisters café. it's basically shredded hash browns, sausage, eggs and cheese casserole. You can't go wrong with breakfast for dinner.


    2 Eggs, beaten
    ½ cup tomato juice
    ¾ cup soft bread crumbs
    2 tbsp. Parsley, chopped
    ½ tsp. Dried oregano
    ¼ salt
    1 clove of garlic, minced
    2 pounds ground beef
    4 to 6 oz. sliced or grated ham
    6 oz. mozzarella, sliced or grated.
    (Reserve some for after baking.)

    Mix the first 9 ingredients and form into a flat rectangle, lay out the ham & then the mozzarella. Roll up starting from the short side, pinch close the ends.
    Place in greased 9” x 13” pan.

    Bake at 350 degrees for about 1 hour and 15 minutes. Place reserved cheese on top and bake until the cheese is melted.

  6. Spaghetti and veggies. Hubby won't be home for dinner tonight, so I'm making something I know the kiddies love.

  7. Burritos.

    I'm so thankful every time we have a rainy day now because I keep thinking it is our last for a while :)

  8. Rotisserie chicken from Costco, thin spaghetti, steamed broccoli and apple slices with cinnamon. Totally random!

  9. you've probably made dinner. but it looks like you need a home made chicken noodle soup day. My kids love helping to make the noodles and it is easier than it sounds! For us: Chicken fajitas with sauteed onions and peppers (i could seriously have an onion fajita i love the onions so much), beans, and spanish quinoa and guac. Maes made apple chimmis for dessert! (we had a snow day...and tomorrow is late start, so being lazy).
