My kids love helping to make the noodles and it is easier than it sounds! For us: Chicken fajitas with sauteed onions and peppers (i could seriously have an onion fajita i love the onions so much), beans, and spanish quinoa and guac. Maes made apple chimmis for dessert! ½ cup tomato ju...SICILIAN MEATLOAF<br /><br />2 Eggs, beaten<br />½ cup tomato juice<br />¾ cup soft bread crumbs<br />2 tbsp. Parsley, chopped<br />½ tsp. Dried oregano<br />¼ salt<br />1 clove of garlic, minced<br />2 pounds ground beef<br />4 to 6 oz. sliced or grated ham<br />6 oz. mozzarella, sliced or grated.<br />(Reserve some for after baking.)<br /><br />Mix the first 9 ingredients and form into a flat rectangle, lay out the ham & then the mozzarella. Roll up starting from the short side, pinch close the ends.<br />Place in greased 9” x 13” pan.<br /><br />Bake at 350 degrees for about 1 hour and 15 minutes.
