Peanut Butter Chocolate Chip Cookies

As a rule, I try to avoid facebook. But every once in a while I am glad that I logged on. I was really glad last week because my friend, Jill, posted a cookie recipe, and I think you all know by now that I love trying new recipes. I hope she doesn't mind if I share it here. These were thick and delicious and so satisfying.

Peanut Butter Chocolate Chip Cookies

1 cup granulated sugar
2/3 cup brown sugar
1 cup butter, softened
1 cup peanut butter
1 teaspoon vanilla
2 eggs
2 cups flour (I used half white whole wheat)
2 teaspoons baking soda
1/2 teaspoon salt
1 to 1 1/2 cups oats
2 cups chocolate chips

Preheat oven to 350 degrees. Sift flour, baking soda, and salt; set aside. Cream butter and sugars til light and fluffy. Add peanut butter and vanilla; mix well. Add eggs, one at a time, mixing well after each. Add flour mixture; mix until just combined. Stir in oats and chocolate chips.

Bake for 12 minutes, or until starting to very lightly brown.


  1. I'm a lurker, but I had to post to say that I made these today, and they hit just the spot of dessert neediness. And because (thanks to your note!) I made them half whole wheat, they were also very filling and self satisfying, which meant I stopped after three. For me that's great, because I have a bad habit of never stopping eating cookies, because they are each individually so small... And I had even forgotten they were part whole wheat until after I'd eaten them, which is great because that means they didn't have that grittiness that whole wheat can sometimes give.
