Blueberries are on sale.


So I made a cake. I just couldn't help myself.

Blueberry Coffee Cake
1 cup packed brown sugar
2/3 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 cup butter

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 cup milk
1 cup fresh blueberries
1/4 cup confectioners' sugar for dusting

1. Heat oven to 350 degrees F (175 degrees C). Coat a Bundt pan well with cooking spray.

2. Make the streusel topping: Mix 1 brown cup sugar, 2/3 cup flour, and cinnamon in a medium bowl. Cut in 1/2 cup butter or margarine; topping mixture will be crumbly. Set aside.

3. For the cake: Beat 1/2 cup butter or margarine in large bowl until creamy; add 1 cup white sugar, and beat until fluffy. Beat in egg and vanilla. Whisk together 2 cups flour, baking powder, and salt; add alternately with the milk to the creamed mixture, beating well after each addition.

4. Spread half the batter in the prepared pan. Cover with berries, and add remaining batter by tablespoons. Cover with streusel topping.

5. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, until deep golden brown. Remove pan to wire rack to cool. Invert onto a plate after cake has cooled, and dust with confectioners' sugar.

This recipe makes a ton of streusel. So I put some in the middle of the cake and the top (which becomes the bottom when you turn it out of the pan). Also, I didn't measure my blueberries. I just used as many as I thought looked good. And I increased the milk to 3/4 cup.

My kids ate the cake part, but left little piles of blueberries on their plates. Silly kids. I thought it was gooey and rich and fantastic.

  2. I should make this. I bought a bunch of blueberries the other day on sale too and keep making tasty fruit salads with them, but my kids keep picking out the blueberries! I thought about making a blueberry pie but I knew I'd be the only one to eat it. :)

  3. Yum! That looks so good. My kids like a few blueberries at a time, for instance, when we have blueberry pancakes, their first pancake will have blueberries, and then the rest they want plain. Crazy! I think blueberries are super yummy!

    Did you get them at the ranch market this week. And if so are they good? I got about 36 pints last week to freeze (yeah 36). And they were all good- surprise. I told my friend that I'd pick some up for her this week if they were still .50 a pint and freeze them so she could take them back to Tucson (packed in dry ice) next time she visits. but...i don't want to venture there again unless they are good. Last week when we went jake was naughty (picking up fruit and throwing it) and then when he lost his chance at taffy when we checked out he threw a fit and got so mad he started spitting on their floor. I was wiping it up with baby wipes!
    It was nice to see you guys at gymboree last week. Hope you got some good stuff! I ended up stopping by anthropologie and then taking the kids to costa vida for lunch. pretty costly morning!
