Saltsa


I was first introduced to the glories of homemade salsa when I was in college. My roommates, Mrs. Dub (bring back your blog already!) and Mrs. R, took turns creating the most delicious, fresh tasting salsa that had ever passed by my taste buds. When I got married, Mike took over as my personal salsa maker. But, he's busy these days, and really, I'm more of a pico de gallo girl anyway. So now I make my own. I always have some in my fridge and I eat it with just about everything. Even by itself. Yum.

Not Spicy Salsa/Pico de Gallo
3-4 tomatoes, chopped
1 bunch green onions, chopped
1 bunch cilantro, chopped
1 small can mild diced green chilies
a little salt, a little garlic powder and you're in business

I suppose you could put some jalapenos in it, or something, but that's not really my thing.

Tonight, I'll be serving it with these enchiladas. Except I made mine with beef. They are so quick and delicious. Give them a try.

  2. we love fresh salsa, too. they have a full salsa bar at our local gourmet market. we get at least a pint a week. we've also toyed with bottling neal's mango salsa for christmas gifts, it's that yummy.

    love the jedi shirt (and the ponytail!). i'm glad it still fits. :)

  5. I love homemade salsa, Sumo is the salsa maker at our house though! Stella is the cutest little Jedi I've ever seen!

  8. Yum! We love salsa too. And I would definitely add the jalapenos. You are in AZ now, you need to go for the scald! :-)
    Elliott found a recipe on a blog one time for super hot salsa, but when we made it, it wasn't hot at all. Such a bummer.

    Stella is adorable... we can't wait to see her... hopefully sooner rather than later.

  12. That's totally different than how I make my salsa, I'll have to try your pico version sometime. I'll post my recipe soon.

    Perfect weather to start your own tomatoes RIGHT NOW. One cannot truly make the best pico de gallo without home grown tomatoes. :)
