Recipe of the Week

Pumpkin Waffles
1 cup flour
2 teaspoons baking powder
3/4 teaspoon cinnamon
1/8 teaspoon salt
1/8 teaspoon ground cloves
1 cup milk
1/2 cup pumpkin puree
1/4 cup packed brown sugar
1 tablespoon vegetable oil
1 egg, lightly beaten
cooking spray

1. Combine flour and next four ingredients (flour through cloves) in a large bowl. Make a well in center of mixture. Combine milk and next four ingredients (milk through egg) in a bowl. Add to flour mixture. Stir just until moist.

2. Coat a warm waffle iron with cooking spray. Pour batter onto iron and cook for 5 to 7 minutes.

Serve with maple syrup. (and/or whipped cream)

from Cooking Light, I think. I've had this recipe for years in my pumpkin recipe stash and had never tried it til now.


We had these for dinner the other night. My kids (and I) loved them. Think pumpkin bread in waffle form. I would definitely make them again, but maybe not for dinner. They were delicious.
